The Inca Dining Room is an experience that takes place at the San Agustín de Callo hacienda. It consists of a 16-course menu that narrates the history of the hacienda. It is inspired in syncretism as a result of the union of Inca and colonial culture. San Agustín, built inside an Inca palace, is one of the greatest exponents of this phenomenon in Ecuador. Dishes incorporate local ingredients and wild herbs collected from the surrounding area.
