On July 18, 2017, international experts of the highest level met in Xochimilco (Mexico) and under the theme "Biodiversity, environment and society" they shared experiences and visions from an interdisciplinary approach.
An initiative of the Mexican chef Enrique Olvera and the Basque Culinary Center and a unique and immersive meeting displayed in the middle of the chinampas, which also served to underline the work of groups such as Yolcán, dedicated to rescuing the historical and agricultural value of Xochimilco.
